Golden garlic shrimp

This is a super easy, quick, weeknight recipe full of flavor that will blow your mind. There’s nothing complicated about it, but the simple ingredients combined in the right way is just amazing. The shrimp taste so buttery and rich, with the garlic infusion and just a little kick from the pepper. Serve this with a simply done veggie side like roasted broccoli (just stick the pan in the oven beside the shrimp) and you are done! Colorful Tuna Avocado Salad

This is an easy lunch that has it all – veggies, good fats, protein, and lots of flavor. It’s pretty to look at too! This is just my take on a regular old tuna salad, but instead of mayo, I’ve used avocado and olive oil for the fat. It’s surprisingly creamy and has a depth of flavor that I really like. Use your good olive oil here because the taste does come through. I subscribe to Barefoot Contessa’s advice for garnishing dishes – I like them to look like what they’re going to taste like, so people know what to expect. This recipe is sort of the “choose your own adventure” variety. You can choose what flavors you use by switching up the herbs and liquids to create a totally different dish. Experiment! This one’s hard to mess up. A few ideas: Asian/Chinese flavors: tamari (or soy sauce) plus rice vinegar, basil, maybe a dash of red pepper flakes Italian flavors: basalmic vinegar with rosemary Thai flavors: coconut milk, basil Super savory: red wine with thyme You get the idea! This is a recipe I made up with Jimmy in mind. My husband, the milkshake connoisseur, to my shock and awe, has agreed to do a 30-day Paleo challenge. For the next 30 days, we will be eating grain, dairy, and legume-free. No mac & cheese, no pizza at Cogan’s, no frequent trips to Dairy Queen.
