Couscous Salad with Tomatoes

1 cup uncooked Israeli couscous
8 oz cherry tomatoes
1/2 cup basil plus more for garnish (from the CSA this week!)
2 tbsp. shallots
2 tbsp. balsamic vinegar
1 tbsp. olive oil
fresh ground pepper

Israeli couscous is so awesome, and nothing like the other couscous (in case you are a couscous hater). It’s kind of like pasta but little balls instead of strings or shapes. Cook the couscous just like pasta. You can tell when it’s done by biting it, should be al dente.

Stir in remaining ingredients. Let sit at least 15 minutes (up to an hour).

Garnish with basil and serve. Yummy as a cold salad too. This recipe serves four and is the equivalent of 4 Weight Watchers points if anyone finds that information useful.

I have an over abundance of basil in the garden and some cherry tomatoes that are getting close to being ripe, I may just have to try it out.

Why do some pasta shapes taste better than others? I think Israeli couscous is awesome for salads. Also, I loved the account of your Belize honeymoon, it sounds dreamy. Congratulations!

That looks so yummy. And your photos always look so fantastic.
I clicked on the picture so that I could see through flickr what kind of camera you are using. Do you use the fujifilm finepix for most of the shots seen on your blog? Just curious. I am unhappy with my current point and shoot, and would love to upgrade to something amazing like a Rebel; but budget and the convenience of a small camera that I could fit in my pocket if I wanted to are making me reconsider another point and shoot small digital.

This looks yummy, yummy, awesomely yummy! Thanks for the WW points info too. I just planted basil plants and plan on gorging myself on it all summer. And tomatoes are my favorite candy on the plant. This recipe is perfect!

i make this all the time, except i use seasoned rice vinegar instead of balsamic, and add a bit of garlic to it. so yummy!
