Golden Vanilla Cupcakes

I do believe these are the most delicious cupcakes I ever have tasted. And they are vegan. I’m surprised and pleased. I bought this book, Vegan Cupcakes Take Over The World, for a swap I’m participating in, but I found out my swap partner already has it! So I’m keeping it, especially after making this recipe.

It was simple, they came out perfect and the vegan buttercream frosting is AMAZING. It’s like a little sugar cloud. I can’t wait to make more recipes from this book, and I definitely am paying the cake hobby shop a visit to get some more fun decorations so I can replicate some of the lovely designs they have going on. Pick up this book!

Ahhh I love that book! My friend has it and I've been trying to pick it up but I always forget. I'm def. going to go order it now!!!

Yummmy... Those look great! I just got into making cupcakes a few months ago myself. Every holiday I'll bring a new batch of cupcakes to work. So I'll definately check out that book for more ideas.

Hey, Amber!
The cupcakes look fabulous. Are there any gluten-free recipes in that particular cookbook? I have a lot of cookbooks from my vegan years, but I never bothered with baking ones (I'm allergic to wheat and dairy). I've been hankering for some baked goods lately, and most of the GF prepared stuff in Atlanta is loaded with dairy.
I love the photo. Very cute. I'll make sure to check out your mom's podcast, too.

Awesome - I love to see people trying vegan cooking/baking! If you don't have it already, check out Isa's Vegan with a Vengeance cookbook. It has tons of cheap, easy and deee-licios vegan recipes!

You shouldn't run into any problems posting a single recipe- excerps are common in recipe columns, even depenhded on to sell books. Besides which, only the specific wording of the directions are copyrightasble- method & ingredients aree not.

If you go to the amazon page, and click the "search inside" it shows the first few pages of the book where it tells you what you'll need.

I dont remember exactly (and i dont have the book with me now) but i think you'll need:

all purpose flour
granulated sugar
vanilla & almond extract
cornstarch
canola oil or nonhydrogenated margarine
soy milk
apple cider vinegar

I think thats it, and for the icing,
nonhyd. margarine
nonhyd. shortening
vanilla extract
confectioners sugar
